Spaghetti Pie

I made this for the boys the other night and it was a huge hit!

1 lb. Bowtie or similar pasta
1 lb. ground beef
1 onion, chopped
2 14.5 oz. cans of tomato sauce
2 t. Italian seasoning
2 t. Garlic powder or seasoning
1 cup chopped kale
1 container ricotta cheese
1/4 c. Parmesean cheese
1 egg
1 cup mozzarella cheese, grated

Preheat oven to 350 degrees. Boil pasta to Al dente. Cook ground beef until brown and cooked thoroughly in a skillet with chopped onion. Add two cans of tomato sauce and Italian seasoning, garlic powder and salt to taste. Simmer 10 minutes.

Mix ricotta cheese, egg, parmesean and kale in a bowl.

In a 9x13 pan, layer pasta, ricotta mix, sauceand sprinkle mozzarella on top. Cover with foil and bake 30 minutes.

Voila!!! Try not to consume all at once:)

Pot Roast

So Billy's mom always make super yummy pot roast and I never have really made it because roasts are pricey but when I saw that they were on sale the other day I had to buy one.




Roast
Carrots
Potatoes
Beef Boullion

Cook Roast w/ 2 boullion cubes and 1 1/2 C. water on 300 F for 3-5 hours. You can also make it in the crockpot but I didn't think the meat was very tender when I did. Add potatos and carrots during the last hour of cooking.

Serve with Gravy. Take drippings from roast and put in sauce pan. Add 2 C. water, 3 boullion cubes. Dissolve. Meantime mix in seperate bowl 2 spoonfuls of flour and 2 spoonfuls or cornstartch. Add just enough cold water to make a runny paste. Add to saucepan mixture stirring constantly.






Chicken Pot Pie from SCRATCH!!!

This recipe is completely inspired by Karalee! When she was here we were talking about food because what else are girls supposed to talk about...haha... and someone said Chicken Pot Pie and ever since I have been craving it!! She was telling me all about her recipe which is completely from scratch and it reminded me of a recipe that I made a few years back that was amazing!! Karalee you should also post your recipe too!!

BTW. This is a recipe you should make only when you have some time on your hands like when your kids are napping or when you really want to impress your husband!It took me 2 hours from the time that I started to the time that we finished eating. Luckily I had time to clean up all the dishes etc. while the pie was cooking!

Sorry for the awful picture-- it tastes better than it tastes. I promise!!

Pie Crusts--makes 2
2 1/2 c. all-purpose flour
1 tsp. salt
2/3 c.+ 2 Tbsp. shortening (I prefer butter flavored but either works)
Ice water (probably about 1/2 c.)


Homemade Cream of Chicken Soup
1 1/2 c. chicken broth
1/2 teaspoon poultry seasoning
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/8 teaspoon black pepper
1/4 teaspoon salt (more or less; taste to test)
1/4 teaspoon parsley
dash of paprika
1 1/2 cups milk, divided
3/4 cup flour
In medium-sized saucepan, bring chicken broth, seasonings, and 1/2 c. of the milk to a boil. In a bowl, whisk together the remaining 1 cup of milk and flour.
Add to boiling mixture and continue whisking briskly until mixture boils and thickens. Cook until desired consistency is reached, keeping in mind that it will continue to thicken as it stands.
 Makes the equivalent of 2 cans of condensed cream of chicken soup.

Chicken Pot Pie
2 unbaked pie crusts
1 lb. leftover roasted fauxtisserie chicken, chopped into bite-sized pieces-- I just used some leftover chicken I had already cooked and frozen
1 12-16 oz. bag of peas and carrots or mixed vegetables, thawed--Next time I make this I want to use fresh/cooked carrots
1 onion, minced
butter
3-4 potatos
Recipe of Cream of chicken soup
1/2 tsp. Kosher salt (more or less, to taste)
Ground black pepper to taste
Instructions:
Preheat oven to 400. Bring a large pot of water (salt optional) to a boil. When ready, add potatoes and boil until tender. Meanwhile, heat about 1 Tbsp. butter in a medium skillet. When the butter is bubbly, saute the onion until it’s translucent and fragrant. Set aside.
 In a mixing bowl, combine cream of chicken soup, chicken, vegetables, onion, and potatoes. Season to taste.
Place one pie crust on the bottom of a pie plate, transfer the filling to the pie plate, and then top with the other pie crust. Crimp the edges and then cut a few vent holes on top.

Place pie plate on a baking sheet and bake for 35-40 minutes or until the crust is golden brown. Remove from oven and allow to stand for a few minutes before serving.

HOW TO POST A RECIPE!!

This one is for you mom!! I have added each of you as authors. Did you get an email? You will have to click Accept this Invitation in order to be able to post. Feel free to change/add anything you see!C

HOW TO POST A RECIPE

1.) Go to http://www.kidsarehungry.blogspot.com/
2.) Scroll to the very bottom of the page. You will see this in the center: Simple template. Powered by Blogger.Click on the word Blogger.
3.) If you aren't already logged in it will have you log in at this point.
4.) It will then take you to a Blogger page with your blogs. You should see: Hey Good Looking Whatcha Got Cooking
5.) there is an orange button with a pen on it. When you hoover over it says, "create a new post" Click on it.
6.) The next page is pretty self explanatory. You write your recipe There is a little blue box with mountains (next to link) if you would like to add a picture. Also make sure you post a title right next to the orange word POST at the top!!
7.)I also have been putting Labels on the posts to help keep them more organized. On the right sidebar. You will see a tag symbol with the word Labels. Click on it. Lable what type of post your recipe is: Main Dish, Chicken, Dessert, Bread. Beverage etc.) You can have multiple labels just seperate them with a comma.
7.) When you are done click Publish (orange button on the top right)

The next part is a little tricky and if you don't do it, I can do it for you!!

8.) Once you clicked publish it should take you back to the admin page with all the posts. Click
on the post that you just posted.
10.) On the left hand side you will see a sidebar. Click on Pages. There will be four categories that pop up in the middle of the screen (main dish, side dish, bread, dessert).
11.) Click on the category that your recipe fits under. If you need to make a new category. You can do that by clicking New Page.
12.) Once you click on the page that your recipe fits under. Type in the name of the recipe. The same as you have in your post
13.) Highlight with your cursor the post name that you just typed. Click Link at the top.
14.) A box will pop up. Paste the URL (Ctrtl V) Make sure the Open in New Window tab is checked and then click ok!!
15,) Wallah! You just completed your first post. If you have any questions comment below!!


Honey-Ginger Glazed Tilapia w/Creamy Sauce



I bought a big bag of frozen tilapia at Sam's Club a while ago and I have been trying new tilapia recipes and this has been our favorite so far!! The marinated fish is good, but the creamy sauce for the top is what makes it. Billy says it reminds him of raita (Indian yogurt sauce).  If you are wanting a light fishy meal on a hot summer day, do yourself a favor and make this ;) Enjoy!!

Ingredients:
3 tablespoons honey
3 tablespoons soy sauce
3 tablespoons balsamic vinegar
1 teaspoon grated ginger root
2 teaspoons minced or pressed garlic
2 teaspoons olive oil
4-6 4-ounce tilapia fillets (or other favorite fish)
Creamy Dipping Sauce
6 ounces fat-free plain Greek yogurt
1 small clove garlic, minced or pressed
1/2 teaspoon grated ginger root
1 1/2 teaspoons soy sauce
2 tablespoons chopped green onions--I didn't have green onions for I used red.
Juice of 1 small, juicy lime (about 2 tablespoons)--I used lemon juice
1 teaspoon lime zest--I didn't have
Sriracha sauce to taste (1/8-1/4 teaspoon will suit most tastes)--I used a tad of habanaro sauce, that's what I had. I think I only put two drops in. I didn't want it to be too spicy for the girls. 
1/2 teaspoon kosher salt
Optional: 1-2 teaspoons finely minced cilantro

Instructions:
Whisk together the honey, soy sauce, vinegar, ginger, garlic, and olive oil. Marinate the fish in the mixture for 20 minutes-1 hour.

While the fish is marinating, whisk together the creamy sauce ingredients. Refrigerate until ready to serve.

I lined a pan with foil and broiled on high for about 5 minutes (until it was a little flaky with a fork) I served with rice and asparagus.  

BTW. I have always hated asparagus up until three days ago. We went over to some friends house for dinner on Sunday and she served asparagus and I decided that I love it! It tastes even better with a little bit of lime or lemon juice squeezed on top and S&P of course!!
